Nakaoki Sake Brewery, founded in 1923 during Taisho era, is located in Kawanishi Machi, a region surrounded by Mount Azuma to the east, the Asahi Mountain Range to the west, and the Iide Mountain Range to the south. Nurtured by the waters of the Mogami River, Nakaoki Sake Brewery aims to create a sake that brings comfort and relaxation to the hearts of those who drink it, like a taste that encourages them to have a second and third glass.
The motto of Nakaoki Sake Brewery consists of three principles:
1. 清慎勤は銘醸の基: Purity, Modesty and Diligence are the foundation of sake brewing.
2. 山高く路窮りなし: With lofty aspirations, there are no limits on the path ahead.
3. 醸神は浄心に宿る: The brewing deity resides in a pure heart.
These are the teachings passed down by the first president, Gishiro Takahashi, from his mentor at Osaka Technical School. Adhering to these teachings, Nakaoki Sake Brewery passionately engages in handcrafted sake production. While preserving the traditions of sake brewing, they also embrace new brewing methods that align with the changing lifestyles of the times. Their goal is to become a source of pride for the local community, using only locally sourced rice from Yamagata Prefecture and producing Premium Sake(Tokuteimeisho-shu) only.
